Alberto Liani was born and raised in Rome, and for decades he has cooked the food of his city on a quiet corner of Carefree — a few steps from the Boulders, where the desert goes gold at dusk.
There are eleven tables. That is on purpose. Everything comes from Alberto's own hands and his own fire: the pizza blistered in a wood-burning oven, the pasta rolled and cut in the kitchen, the bread pulled warm before you sit. Nothing arrives from far away, and nothing is rushed.
Come in as a stranger and Alberto learns your name. Come back and he remembers your table. It is small, it is romantic, it is candlelit — the kind of place a town keeps to itself and quietly loves.
